Recipe: Popcorn and Peanut Butter Chocolate Cake

Popcorn and peanut butter chocolate cake
50g cocoa powder
125ml boiling water
butter, softened, chopped
330g caster sugar
2 tsp 
vanilla extract
3 eggs
225g self-raising flour
75g plain flour
180ml buttermilk
60g nutty caramel popcorn (pick your favourite brand)
2 tsp 
icing sugar

Peanut butter frosting

ready-made vanilla frosting

smooth peanut butter
1 tbsp

Coming up to his 74th birthday, Halcyon Landing resident Frank Seed enjoys continuing to keep his mind active with work.

After a career in mechanical engineering, working in both private and government sectors, he now works part-time for a building company.

Mr Seed says the hours he works varies depending on what was required but the flexibility of the online-based role was important.

Outstanding sales in the second instalment of the Halcyon Lakeside over 50s community at Bli Bli has prompted the developer to push ahead with the next release.

A second phase of 20 homes in the waterfront community sold out for a total of $11million within a month of the project’s February 29 release.

Home owners from the Halcyon Parks over-50s community at Meridan Plains cooked and sold more than 1000 sausages to raise money for prostate cancer research as part of the nationwide Big Aussie Barbie last month.

Barbecues held across the country have raised close to $800,000 to date for the Prostate Cancer Foundation of Australia.

Halcyon communities jumped on board with the initiative, with home owners cooking and selling sausages for a gold coin donation.

The Halcyon craft and chat group have pulled together to provide relief for premature babies at the Gold Coast University Hospital. The women have made hundreds of beanies, blankets and incubator covers for the vulnerable babies in the hospital’s special-care unit.

Spokeswoman Brenda Whalon said they took on the project after hearing about the challenges faced by premature babies. “The Gold Coast University Hospital is equipped to care for many sick or premature babies who would previously have been sent to Brisbane”, said Brenda.

The intrepid cyclists including Halcyon staff member Tracy Royal, descended on Queenstown before setting out on their 150km journey from Clyde to Middlemarch. The route followed the old Maniototo rail line and culminated with one of the world’s great train trips on the spectacular Taieri Gorge railway into Dunedin.

Along the trail the group took a step back in time to New Zealand’s rural past, cycling through spectacular scenery, sampling first-class produce from road stalls and wineries while creating lasting friendships and memories for life.

The Big Battlefield Charity Bike Ride

Inspirational home owner Laurie Whelan, is one of just nine people nationally shortlisted and subsequently selected to participate in a 580 kilometre charity bike ride traversing the battlefields and cemeteries of the first World War.

The Big Battlefield Bike Ride, taking place in Belgium and France in June, is organised by Mates4Mates, who support current and ex-serving Australian Defence Force members who have physical or psychological injuries as a result of their service.
